Black Bean Fiesta Jar Salad
Ingredients:
- 1/2 cup black beans, cooked and drained
- 1/2 cup corn kernels, fresh or frozen
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red bell pepper, diced
- 1/4 cup green bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup shredded cheddar cheese
- 1/4 cup tortilla strips or chips
- 1/4 cup salsa
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Optional: avocado slices for topping
Instructions:
In a clean and dry mason jar, start by layering the ingredients in the following order: Start with salsa at the bottom of the jar
Add black beans on top of the salsa
Layer corn kernels over the black beans
Sprinkle diced red bell pepper and green bell pepper
Add cherry tomatoes
Next, add diced red onion and fresh cilantro
Top with shredded cheddar cheese and tortilla strips
In a small container, combine lime juice, olive oil, cumin, salt, and pepper
Seal the container and shake to make the dressing
Pour the dressing over the salad in the jar
Optionally, add avocado slices on top of the salad
Seal the mason jar and refrigerate until ready to eat
When ready to enjoy, shake the jar to mix the ingredients and pour the salad into a bowl
Toss well before eating
