Mint Chocolate Chip Paleo Brownies Made With Avocado
Ingredients:
- 2 ripe avocados, mashed
- 1/2 cup honey or maple syrup
- 1/3 cup coconut flour
- 1/3 cup unsweetened cocoa powder
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup paleo-friendly chocolate chips
Instructions:
Preheat your oven to 350F 175C and grease an 8x8-inch baking pan
In a mixing bowl, combine the mashed avocados, honey or maple syrup, eggs, vanilla extract, and peppermint extract
Mix well until smooth
In another bowl, whisk together the coconut flour, cocoa powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, stirring until a thick brownie batter forms
Fold in the paleo-friendly chocolate chips
Pour the batter into the greased baking pan and spread it out evenly
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean
Remove from the oven and let the brownies cool in the pan for 10-15 minutes
Once cooled, cut into squares and enjoy your delicious Mint Chocolate Chip Paleo Brownies!
