Nutty Collagen Protein Bites



These gluten-free, low-carb Nutty Collagen Protein Bites are a tasty snack that's great for when you need a quick energy boost. They have a satisfying mix of tastes and textures thanks to the almond flour, coconut, nuts, and collagen protein powder that they contain. Plus they're simple to make and don't need to be baked!

Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup collagen protein powder
  • 1/4 cup chopped nuts such as almonds, pecans, or walnuts
  • 2 tablespoons creamy almond butter
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons sugar-free maple syrup or honey substitute
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

In a large mixing bowl, combine almond flour, shredded coconut, collagen protein powder, chopped nuts, and salt

In a separate bowl, mix together almond butter, melted coconut oil, sugar-free maple syrup, and vanilla extract until smooth

Pour the wet ingredients over the dry ingredients and stir until well combined

Using your hands, roll the mixture into bite-sized balls and place them on a baking sheet lined with parchment paper

Refrigerate the bites for at least 30 minutes to firm up before serving

Store leftovers in an airtight container in the refrigerator for up to a week
