Brown Butter Mushroom Soup
To make this low-carb, comforting soup, you'll need brown butter and earthy mushrooms. Ideal for a cozy evening at home or as a starter at a dinner party.
Ingredients:
- 1 lb mushrooms, sliced
- 4 tbsp butter
- 4 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Chopped parsley for garnish optional
Instructions:
In a large pot, melt the butter over medium heat until it starts to brown, about 5 minutes
Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown, about 10 minutes
Pour in the chicken or vegetable broth and bring to a simmer
Let it cook for 15 minutes
Using an immersion blender or regular blender, blend the soup until smooth
Stir in the heavy cream, garlic powder, onion powder, salt, and pepper
Simmer for an additional 5 minutes
Adjust seasoning if needed
Serve hot, garnished with chopped parsley if desired
