Instructions:
Start by heating the oven to 400F 200C
To make the honey mustard glaze, mix the olive oil, honey, Dijon mustard, salt, and pepper in a bowl with a whisk
Put the carrots on a baking sheet that has been lined with parchment paper after they have been peeled and cut up
Add the honey mustard glaze to the carrots and toss them around so that they are covered all over
On the baking sheet, arrange the carrots in a single layer
The carrots should be roasted in a hot oven for 25 to 30 minutes, or until they are soft and caramelized
They should be stirred once or twice during the cooking time
Take it out of the oven and sprinkle fresh parsley on top
