Fluffy Oatmeal Chocolate Chip Pancakes
Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
- Butter or oil for cooking, as needed
Instructions:
In a blender, combine rolled oats, all-purpose flour, granulated sugar, baking powder, baking soda, and salt
Blend until you have a fine oat flour mixture
In a large mixing bowl, whisk together the buttermilk, milk, melted butter, eggs, and vanilla extract
Add the dry oat flour mixture to the wet ingredients and stir until just combined
Do not overmix; some lumps are okay
Gently fold in the chocolate chips into the pancake batter
Heat a griddle or non-stick skillet over medium heat and lightly grease it with butter or oil
Pour 1/4 cup portions of the pancake batter onto the griddle/skillet and spread them out slightly to form circles
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes
Flip the pancakes and cook for an additional 2-3 minutes, or until they are golden brown and cooked through
Transfer the pancakes to a plate and keep them warm while you cook the remaining batter
