Asian Chicken Salad
This Asian Chicken Salad is a delightful blend of flavors and textures, featuring tender shredded chicken, crisp vegetables, and crunchy toppings, all tossed in a savory sesame ginger dressing. It's a refreshing and satisfying dish perfect for a light lunch or dinner.
Ingredients:
- 2 cups shredded cooked chicken breast
- 4 cups mixed salad greens
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup sliced almonds, toasted
- 1/4 cup crispy chow mein noodles
- 1/4 cup sesame seeds, toasted
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 teaspoon minced fresh ginger
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
Shred the chicken and mix it with the red cabbage, carrots, green onions, cilantro, almonds, chow mein noodles, and sesame seeds in a large bowl
To make the dressing, mix the soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic in a small bowl with a whisk
Add the dressing to the salad and toss it around to cover it all
Add pepper and salt to taste
Serve right away, with extra cilantro on top if you want
